On November 10, 2017, Gastromotiva participated in the Forum “Construyendo soluciones sostenibles para la prevención y aprovechamiento de las pérdidas y desperdicios de alimentos” in Colombia at the invitation of the Food and Agriculture Organization of the United Nations (FAO) and Corporación de Abastos de Bogotá SA – Corabastos.
Gastromotiva integrated two panels of the event, a theoretical and a practical one. Firstly, Nicola Gryczka, CEO of Gastromotiva, moderated the panel “Sustainable gastronomy: practical session of preparation of recipes, use of recovered foods, practical advice”. The speakers were Laura Hernández Espinosa, from Leo Espinosa Foundation, Sebastian, from El Cielo restaurant (led by chef Juan Manuel Barrientos), and Harry Sasson, chef of Harry Sasson restaurant. Then, Luiz Malta, chef of Refettorio Gastromotiva, Charlotte Schaus, project coordinator of Gastromotiva, and chef Sebastian gave a lesson on #SocialGastronomy live for 150 people using ingredients rescued from the waste!
